Connie Chew has been described as Malaysia's "Queen of Ferments". From 2015 onward her fascination has taken her to Thailand, Japan, Korea, and further afield to learn traditional fermenting techniques, which she has incorporated with her own tastes to create distinctive new dishes. She remains enthusiastic about reviving the age-old Asian art of fermentation and bringing it to life in today's world.
